Recipe: Gingerbread Pancakes

Work day mornings I try to keep my breakfast light and healthy, but weekends? All bets are off. There is something comforting about a lazy weekend morning that starts with bacon, eggs, and fluffy soft pancakes cooked in a cast iron skillet and doused in real maple syrup (no fructose flavored syrups in this household!)

Now that its the season of "creme brulee" and "Fa lalala Lattes",  pumpkin coffee creamers, and peppermint spiked drinks, who can resist jumping on the bandwagon.... Not me. But instead of baking a batch of gingerbread cookies and eating them all daylong, why not opt for a fluffy breakfast alternative?

Gingerbread pancakes.


Take your favorite standard pancake recipe, and add to it:

1/4 c dark brown sugar
1/4 c coffee
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp cloves
1/2 tsp ginger

I know, I know. Coffee? Well if you find yourself out of molasses, yes, the brown sugar and coffee combination definitely does the trick.  

Mix, spoon into a hot skillet, flip and eat! Warmly spiced and super fluffy, these pancakes hit the spot!
