Fish Tacos

Some of my best moments in the kitchen happen when I lack ingredients and am forced to improvise. The biggest thing is realizing it is not the end of the world if you don't have an ingredient. Most of the time, google is my best friend when trying to concoct a decent substitute for buttermilk.




Let the recipe improv begin!:
Choose your white fish - I had tilapia, but cod will work nicely too.

Seasoning for Tilapia:
2 cloves garlic
¼ tsp cayenne pepper
½ tsp paprika
¼ tsp turmeric
2 tablespoons olive oil


Special sauce:
1 table spoon mayo
¼ cup 0% plain greek yogurt (Fage is my absolute favorite)
Pinch of dried oregano
¼ tsp cumin
¼ tsp cayenne pepper


Toppings:
1 ½ diced roma tomatoes
1 cup chopped romain
2 scallions

Tortilla:
To your liking! mine are small corn torilla's :-)

Makes 4-6 fish tacos

Sear the fish on a grill pan, grill, or frying pan. While fish sizzle, put ingredients for special sauce in a bowl and mix it all together. Chop veggies. Remove fish from heat when done, shred, and assemble the fishy tacos!
