Recipe: White Chocolate Pumpkin Spice Latte

This month has been super busy for the Husband and I; it's gone by so fast, mostly because we have been out of town every weekend to celebrate weddings of loved ones, friends, and coworkers.

This weekend is the one weekend we caught a break. Sort of. We did our "fall cleaning" overhaul of the apt. but made a leisurely day out of it.

I noticed Starbucks has initiated fall with bringing back their pumpkin spice latte, but for me, it is a little too sweet [impossible!!]. I tinkered around the kitchen and came up with this:


1/8 cup white chocolate chips
1/2 cup coconut milk (regular, carton milk)
1/2 tsp pumpkin spice
1 tbs pumpkin purée (fresh or canned)
1/4 tsp vanilla extract
1/2 cup- 1 cup coffee ( your favorite roast, right now I am drinking SBUX's anniversary blend)


Heat a pan on medium heat. Add white chocolate chips. When they start to soften, add coconut milk [i used coconut milk because it is richer than almond milk. If you used another leaner milk option, you may need to use a blender/immersion blender]. Once the chocolate is dissolved, add vanilla, pumpkin spice, and pumpkin. Stir. Add coffee (fresh or left over). Once heated and combined, strain over a mug.

Makes 1-2 servings depending in the size of your cup.
